In simple words,
Seasoning of the stone is the action of various changes in seasons on the stone that is drying and wetting of stone which gradually forms the crack in stones which leads to the weathering action and forms inorganic small size materials.
In technical terms,
Formation of quarry sap which leads to degrading the stone called a seasoning.
Stones like limestone, sandstone, and laterite have high moisture which leads to quarry sap. During this state, the stone is soft in nature and cracks easily. but minimum 6 – 8 months are required for seasoning of stone.

Seasoning of stone :
Generally, the action of having various changes in different seasons on the stone which are drying and wetting of stone which gradually forms the crack in stones which leads to the action of weathering action and forms inorganic small size materials is called seasoning of stone.
Seasoning refers to both drying and wetting cycles on one hand, and airing of stone, on the other hand. Dehydration during seasoning is more or less an irreversible process. Thus seasoning applied mainly to soft limestone; hard limestone seems to less affected by it. Stones have natural moisture, known as quarry sap. This quarry sap renders the stone blocks comparatively soft and makes them easy for working. Immediately after quarrying, a stone is soft and is easy to work with it so sized and primarily dressed, but polishing requires a fully seasoned and hardened stone.

Stone types namely : Sandstones , Laterite and Limestones contain moisture when they came out of quarry. This is called quarry sap . Stones are soft in this state and can be easily dressed to shape .
Once sap is is removed stones are exposed to open air for 6 to 8 months and this process is seasoning.

Newly cut stone has some moisture which called quarry sap. Due to moisture, stone durability decrease.
So we need to Remove that moisture content and that process of removing moisture (quarry sap) from stone is called seasoning of stone.
Basically 5-6 month need to the done seasoning process

After quarrying and dressing, stone still retains natural moisture within. This moisture is called quarry sap. The removal of this moisture by cyclic drying and airing is called seasoning of stone. This moisture if not removed may render the stone to be soft and weak. Upon frosting it may cause the stone to weaken and split. Seasoning is crucial to retain the toughness, hardness and strength of stone.
Seasoning is both drying and wetting cycles on one hand, and airing of stone, on the other hand. There is an increase in strength due to the re-deposition of percolated minerals, surface carbonation, transmission and deposition of minerals on the surface of a stone, by both the evaporating moisture, and addition of water. Dehydration, during seasoning, is more or less an irreversible process, Seasoning applies mainly to soft stone; hard stones seem to be less affected by it.

The freshly quarried stones contain some amount of moisture. This is called quarry sap. The process of removing quarry sap is known as seasoning of stones. Generally 6 to 8 months required for proper seasoning.
